I am looking for a very simple recipe for Spanish rice. My mother used to make it a lot, and she can't tell me how. I'll probably used brown rice, if that makes a difference. The simpler the better!

Spanish Rice Recipe Ingredients

2 tablespoons olive oil (can use up to 1/4 cup) 1 onion, chopped fine 1 garlic clove, minced 2 cups of medium or long-grain white rice 3 cups* chicken stock (or vegetable stock if vegetarian) 1 heaping tablespoon tomato paste or 1 cup of diced fresh or cooked tomatoes, strained Pinch of oregano 1 teaspoon salt

*Check the instructions on the rice package for the proportions of liquid to rice. They can range from 1:1 to 2:1. If your rice calls for 2 cups of water for every cup of rice, then for this recipe, use 4 cups of stock for 2 cups of rice. Method

1 In a large skillet brown rice in olive oil, medium/high heat. Add onion and garlic. Cook onion rice mixture, stirring frequently, about 4 minutes, or until onions are softened.

2 In a separate sauce pan bring stock to a simmer. Add tomato sauce, oregano, and salt. Add rice to broth. Bring to a simmer. Cover. Lower heat and cook 15-25 minutes, depending on the type of rice and the instructions on the rice package. Turn off heat and let sit for 5 minutes.

Serves 4 to 6.

Use Calasparra o Bomba rice. It's medium grain and fatter than basmati. I'm referring to Spain here. As for recipes, google is your friend.

There is a recipe called "Gulf Coast Style White Rice" in Mexican Everyday by Rick Bayless. It is the very best rice I've ever had. I know it's not what your looking for, but I can't help mentioning it anyway. It has such simple ingredients, but it is so delicious! His cookbooks are the best Mexican food. Also try Cochinita Pibil in banana leaves....ummm, la boca se me hace aqua!

We follow a similar recipe, but we use bacon cut into pieces and cook things in the grease instead of using olive oil, we use bell peppers and chiles in addition to the onion, and we add cumin, basil, thyme, red, black, and white pepper in addition to oregano. Sometimes my wife adds ground beef--one time she added eggplant too, which was surprisingly tasty. We also put grated chedar cheese on top a few minutes before removing from the stove.

Google has so many recipes for everything, you could spend your life reading them and never get to the kitchen.

At a minimum you need Rice Tomato Onion Garlic Knowledge of the cooking characteristics of brown vs. white rice, how much water to leave out depending on the volume of tomatoes you add.
