Which word for "above" would you use for "The poster is above the door." Are "sobre" and "encima de" ever interchangeable? Can't they both mean "on top of", as in, "The books are on top of the table." ?

To use "encima de" the poster must be resting on top of the door. It appears that this poster is on the wall which is above the door, so the only logical way to say this would be "arriba de la puerta."

"The books are on top of the table." ...."Los libros están (en / en cima de) la mesa."

"Put the table cloth over / on the table" ..... Pon el mantel sobre la mesa."

I would use

"El cartel está por encima de la puerta".

You could probably use "arriba de", "sobre", or "encima de" for this sentence, but I see "por encima de" used more often in instructional texts.

I'd just say "el póster está arriba de la puerta"
