Why is the plural of child not childs? Why is the past of bring not bringed? It is called an irregularity, and there are hundreds of irregular verbs in Spanish, so you'll have to get used to them. In particular, most of the verbs (most, not all!) ending in -zer or -zir change to zc, like "conocer -> conozco", "lucir -> luzco". "Empezar" ends in -zar, so it doesn't have this irregularity, but the "e" changes to "ie" (empiezo").
I recognise empezar as a radical changing verb, which means that when it is conjugated to the Present tense and the Present Subjunctive tense, it changes its middle e to ie, to form 'empiezo', although in the subjunctive form it becomes 'empiece'. I don't understand where you got the 'co' from.
Empiezo is correct, "empiezco" is totally wrong.

It's empiezo. The form of empezar, it's one of those conjugated e-ie verbs.
