In Spanish, how do you say "renaissance man" ? Is the correct translation "hombre del renacimiento"?

yes, but it should say ´hombre del ´Renacimiento´, with capital letter.

Also, according to context, you can say renacentista

I am using in reference to José Martí who appears to be a true Renaissance man to me.
