Mine is simple and everyone has heard it, "Do unto others...." ie:"The Golden Rule"
My two favorite sayings are:

If the shoe fits, wear it if it was on the other foot in his mouth, and that's like the pot calling the whole 'nother kettle of fish blackhearted or running the table around like a head with its chicken cut off. And if you don't like it you can go fly a lump it that is as white as don't eat the yellow snow which is also about as easy as shooting fish in a barrel full of monkeys that couldn't hit the broadside of a barn with their eyes closed and all the lights turned on but nobody's home because the elevator doesn't go all the way to the top of the morning.

In Greece we have a saying among many, that roughly translates to this..
Don't give an angry man dishes to wash and to a hungry man bread to bake.
The Spanish equivalent must be something like this..

I like this one myself. It's in Latin:
Calvo turpuis est nihil comato, which I believe translates to 'nothing is uglier than a bald man with hair'.
