"Proyecto secundario" sounds more accurate. A project that is not your main work or project. Proyecto paralelo is a literal translation of parallel project.

It could be "proyecto paralelo" no need to use "en" in this case.

proyecto en paralelo could work. But in the context it was just a one-time thing. An artist (painter) that wrote one book. Maybe there is another way to say it? Anyone got any ideas?
