How do you say "pick up" in reference to language? For instance, "Once he arrived in Mexico, he picked up Spanish pretty quickly."

She picks up languages really easily.

Aprende idiomas con mucha facilidad.

I don´t know if there is an idiomatic expression in Spanish.

In this sense, "to pick up" means to acquire knowledge or skill.

In a related expression, for example "Did you pick up on what the speaker was trying to say?" - means to understand a deeper meaning.
