My boyfriend is from Guatemala and said something in Spanish that sounded like "caritho" but I can't figure out what word he actually said or what it means.

The spanish word is "Cariño" Cariño is Affection, when you say "Cariño mio" you can translate it like My darling, My sweetie. It isn´t my love. You can say this expression to a son, or to a girlfriend like a familiar sentence.

I think he was saying "burrito" which can mean a few different things depending on context.

I think he could also be saying "carrizo", which literally means "reed", but which in some places it is used as a benign euphemism for a stronger expletive. In those places it is used to express amazement, or surprised amusement.

caritho sounds like carito

or maybe carrito.

Everybody assumed your boyfriend was being nice with you and said cariño, but if you give us a context, a situation when that word was used we could be more helpful.

Maybe your name is Carol, or Caroline, and he´s calling you Carito, too.
