Hola! Should I introduce myself as:
Estoy Nicholae, -o- Soy Nicholae?
Just a little confused as I think I've seen both...

Well, if you are Nicholae for 3 seconds it may change 
You should say Soy Nicholae as it's your permanent name.. 
Ser vs. Estar you may have a look at this, it's very useful.

You would never say, "Estoy Nicolae" as you are and will always be Nicolae. You would say, "Soy Nicolae". Please go to the reference section under the More tab and go the the grammar part and you will see an excellent articel on ser vs. estar. It's really not that hard once you get the hang of it!
