If this is what you mean I think I would go with 'galleta de arroz'.

Seems right to me, pastel is cake and arroz is rice and in spanish grammer they don't say it like we do.

In English, why do we call it a rice "cake" ??? it's nothing like a "Cake".

I found this definition: "a block of compacted or congealed matter" as an alternative for cake. It fit my opinion of a rice cake. - Stadt, Nov 18, 2010
