How do you begin an informal letter to a spanish friend?

Try 'Hola', or 'Querido/a' + his/her name.

Informal in a letter would be the same as in person.
¡Hola! (Most common)
¿Qué tal?
¿Qué onda?
¿Que hubo?
Querido(a)........(a loved one)

If it's informal to a friend, why not just say, ¡Hola! ¿Cómo estás?
