How would one translate "summer home" or "vacation house" (a house that the owners only use in the summer)?-

Yes, "casa de verano/veraneo" are usual, informal expressions. In formal speech they are called "segunda(s) residencia(s)"

I'd use "casa de veraneo"... or "casa de verano"... both are used
