The changing gender of "sal"

The word salt. "sal". seemed to have changed gender when it arrived in Iberia. It was masculine in Latin and in Italian, French, Galician and Portuguese, it remains so. But in Castilian and Catalan, it has turned into feminine. Does anyone know why?

I have traveled in Mexico, Costa Rica and Spain and have only ever heard "la sal". This may be a mystery...
