when do you conjigate like take off the last two letters and add -amos and when do you kno what to replace it with

It seems to me that you are in need of a beginners course in Spanish. How about starting from the beginning and going through the Learn Spanish section. The answer to your question will become clear during the course.
You will learn what a verb is and when you need to change the endings (Conjugation).
