It's listed in our textbook as a Puerto Rican dish - cassava & black beans?

Hi and welcome to the forum.

"Yuca" is a root vegetable and a popular dish in the Dominican Republic usually eaten with rice and beans or "moros," which is combination of rice cooked with beans.

I also saw "fried yuca y moros" on a Cuban restaurante menu. - --Mariana--, Nov 1, 2010

This is what boiled cassava (yuca) looks like.

Moros makes reference to another dish, cristianos y moros, white rice and black beans, or Christians and Moors.
