In schools in American we have "honors" courses for advanced students. For example a student can take English II Honors instead of regular English II. Do schools in Spanish speaking countries have the same? If they do, what are these courses called?

There is no way to translate this into "Spanish", because each country has as different education system, and of course, a different terminology. In Spain, the closest thing to a non honours degree is called "diplomatura" (a 3 years degree) and the closest thing to an honours degree one would be "licenciatura" (a 5 years degree).
