paraphrasing,
podamos coincidir --------> I wish we´ll meet. encantada -------->pleased to meet you
She´s saying that she expects to meet you somewhere, coincidir is to ´occur simultaneously´, to meet, from ´co´ (together) + ´incidir´ (occur)

Hard to tell the meaning without more context and I think encantada is a separtate sentence as it is a feminine form of the adjective and would not apply to you, but to the female speaking the sentence (una despedida)
Also note that podamos is in subjunctive mood so it may be a nosotros (let's) command.

Well, rather than a command it sounds like a wish, like "espero que podamos coincidir". - bill1111, Oct 13, 2010
