How do you say "are" in Spanish?

In your example (You are a girl), Tú>"Eres". But this will change depending if its singular or plural, (We are ) > Somos. Usted > Es....
Welcome to the forum. The English word "are" is from the verb "to be". In Spanish, "to be" is "ser" (in this case, it's a little more complicated than English). You have to conjugate "ser" just like you have to conjugate "to be". You can plug "ser" into the dictionary here and get all the conjugations.
It also depends on who you're talking to how you conjugate "ser", whether it's formal or informal. Usually when you're talking to a friend, family member, or child, for example, you'd use the familiar form. "Girl" also has different interpretations, depending on the age of the girl and the situation.
You are a girl - Eres niña
Oh.... looking at your question again, now I think you want to know how to say, "are"?
That would be eres or es as I described above for sentences such as you asked about. Spanish also has a completely different word that can mean "are", but it would not apply is this sentence.
Eres niña.
Eres chica.
Es niña. (Formal)
Es chica. (Formal)
To me, a niña is more like a little girl, while a chica is just a girl.
