'-' es un hyphen. Pero '–' y '—' son dashes. At least, that's how I distinguish between them. It may not be technically correct (or it may!) but everyone will know what you mean.

"Guión" es correcto y cuando está seleccionado el español, se encuentra en la tecla en que se ocupan los signos "?" y "/" del inglés.
