what does "ten" mean in Spanish? My Spanish girlfriend gave me a dirty dish and said "ten."

As stated by others, it literally means "Take {it}!" (in command form...she's telling you to take something...the plate in this case).
In English, we would normally just say, "Here!" or "Here you go" as we hand someone an object we wish them to take (I don't know why we say that, though).
Another one you'll hear that is somewhat similar is "Tienes aquí" (literally: "you have {it} here") and this is used almost exactly like our "Here you go!" (like when a waiter puts a order on your table or whatnot)...in other words it is said when someone is giving you something you asked for.
Another common "¡Ten!" phrase is "¡Ten cuidado!" (literally: take care...again in command form), which is used like we use the phrase "Be careful!" Or ¡Ten más cuidado! (Be more careful!).

Ten is from the verb tener = meaning to have and is in the imperative form which is given as a command
In this context you could say that it would be like the infinitive 'to take'
