First time I am using this landscaper and I need him to "pull all the weeds", "trim the bushes" and "cut back the perennials to the ground". How do I say all these things???

I would say: Arranque la maleza "pull out the weeds" Pode los arbustos "Trim the bushes" Corte las plantas perennes a ras "cut back the perennials to the ground"
Mountaingirl's answers are spot-on, the only thing that I would add is to put the words, "Por favor" in front of each request. That means, "please".
And when they are leaving, you can say, "Gracias." That means "thank you".
