"date prisa" vs "apurate"
Would the expression "hurry up and eat" be "date prisa de comer" and/or "apurate de comer"?

It should be "come rápido" or "come rápidamente" or "come con rapidez". You have to think how you would say it if you didn't speak a language, then translate from there. "Hurry up and......." is sort of colloquial.
