"Gusto" is used in many different contexts. In this particular sentence, the closest translation would be "Jump for pleasure."

So yes, "Alegría" would sound much better.

No. Alegría is joy. Saltar de alegría does work for jump for joy in Spanish, also "Saltar en una pata".
