If I am talking about the catholic church as an institution, should iglesia be written with a capital letter: La Iglesia?

Reading this article it would seem that Iglesia is capitalized and católica is not unless it is part of the official name (see first sentence).

Qfreed is correct. The institution is written "Iglesia", while the building is "iglesia". You write that the people in a Catholic "iglesia" (church) are "católicos", but the official name of the religious order would be "Iglesia Católica".
