An example was shown using ser that reads, "Somos doctores."

¿porqué es no "Somos los doctores"? Why is it not said this way with the 'los'?

(**I accidently put "Estamos doctores" in the previous post)

An example is shown using estar that reads, "Estamos doctores."

"Estamos doctores" is incorrect in Spanish. You cannot use nouns (eg. doctores) with "estar".

"Estamos los doctores" is correct, but it sounds a bit like Yoda, and it means "The doctors are", referring to their location or existence. To mean "We are doctors" you must say "Somos doctores". Still, for a medical doctor the proper terms should be "médicos".
