how to use el cabellero? is it possible to use it like queridos cabelleros s queridas mujeres?

"cabellero" would be "related to the scalp". The correct word is "caballero", and it is something like gentleman, yes. Regarding that "queridos", although in English you address people (specially in letters) with "Dear...", in Spanish you only say that if you like or love that person a lot, so you better avoid that. What to say depends on the context where you are going to use it.

As you are probably aware, and as chicasa inferred, "Querida" is an informal salutation in a letter. To combine that with "caballeros y mujeres" could be odd, combining informal with formal useage. Maybe estimado would be better as chicasa said. Something to look out for, in Mexico (and probably elsewhere) "Caballeros" and "Damas" are often used to indicate the Men's and Ladies Rooms in a restaurant, so a) there may be some connotations there, and b) Damas might work better than Mujeres in your proposed salutation. My thoughts...

In letters I tend to use "Estimado/a" but that is quite formal.
