Tajada is a piece, cut or slice of something, especially used with food (and metaphorically, with money.) You speak of tajadas de carne/fruta/...

Rodaja is a ROUND and thin slice of something (ie. a disk), especially applied to food. This word is used with slices of sausages, cucumbers and other cylindrical shapes.

Rebanada is also thin, but the shape does not have to be circular (like in rodaja). For example, a slice of bread from a load is una rebanada de pan. This word is specially used with bread.

Apart from these standard meanings, there are other usages, of course (ie. in Spain, tajada also means the act of getting drunk.

Hola, welcome to the forum wink

Cómo Wikipedia dice,

La tajada es un alimento típico de los países caribeños, (...) Consiste en plátano maduro cortado en largas lonjas fritas en aceite muy caliente.

But I don't know anything about rojada. I guess it is also some kind of a food.

Una tajada is a piece cut from something, una rebanada is a similar word, like a slice of bread.

Una rodaja is also a piece cut from something, but it is circular in shape, like a slice cut from a lemon.
