Hello guys, I want to say: day one, day two, day three is it el día uno, el día dos ... or la día..?

El día is correct. Día is masculine and therefore requires the article to be masculine as well. This is why "Good morning" is Buenos días and not buenas días.

No, it's not a verb at all, it's a noun. There are general rules for assigning gender to nouns, but there are also many exceptions to the rules. Día is an exception to the rule that nouns ending in -a are feminine. That's why it's best to learn nouns with their article - memorize el día, la noche, el policía (male police officer), and that will help you remember the gender.

agua is not a masculine noun although it takes article el.

some o of the feminine nouns starting with a takes el isnstead of la.

it is el día and masculine. Some spanish words come from Roman times. Words like agua, tema and día. These are all masculine nouns.
