So I notice that caballero is also an adjective that means "gentlemenly". So would "El hombre caballero" be "the gentlemenly man". Like "the nice guy".? Gracias.

Not quite. The word you're thinking of is "caballeroso". You can say: "Un hombre caballeroso", but never (for obvious reasons, I hope), "un caballero caballeroso".
