"te dije que 'buenos días." ... "No lo dijiste (sounds better than "hiciste")... "Pues, quise decirlo."

The first part of your translation, Jeezle, is just fine:

Te dije "Buen día".

Although you could also say: Te dije "Buenos días".

For the rest, refer to mountaingirl's excellent rendition.
