Just to help you out a little:

to take a walk = dar un paseo from the verb pasearse

so, the cow took a walk = la vaca dio un paseo

ir de paseo = to go out for a walk

I have taken the liberty of both translating part of your story/account into Spanish and suggesting an alternative phrasing. I hope that you don't mind.

Entonces la vaca dio un paseo y mientras estaba andando se cayó y se di un golpe en la cabeza y se quedé dormido.

= Then the cow took a walk and while she was walking she fell and hit her head and she fell asleep.

I agree totally with Dolores that none of these actions interrupts another. I take it/assume that you want to know this so that you can know which tense to use:imperfect or preterite ?

In stories you can use the imperfect to set the scene followed by the infinitive as Paralee explains in el perfecto v el Imperfecto Spanish 2 (I forget which actual lesson)

The cow took a walk. She fell. She hit her head. She went to sleep. The man

came home. He couldn't find her. He began to look.

None of these interrupts another action. An example of that would be:

While I was studying, my friend called me. (She interrupted your studies.)

Mientras estudiaba, mi amiga me llamó.
