"es dulce" or "está dulce"?

"es dulce" or "está dulce"?

I have seen "El limón es ácido" but also "Esto está muy ácido" and "El azúcar es dulce" but also "No, está dulce".

Can you use both "ser" AND "estar" interchangeably with these taste properties, or is there a (subtle) difference in meaning and usage?

Yes, you are right. If it is an inherent quality it is 'ser' "El limón es ácido" and something changeable use 'estar'. Example talking about my tea "No está dulce". (needs more sugar).
