Hi, Ringostarr, welcome to the forum.
I just checked my Spanish language cake/cookie cookbook and see a photo of sprinkles on top of a cake with the ingredient listed as "chispas de colores para decorar". This makes sense, in that "chocolate chips" are "chispas de chocolate".
Colored sugar is "azúcar verde/rosada/azul...etc."

This question was asked a while back, and after some research I discovered that there are several different ways to say this. Depending on what country you are in you might find them described as:
gránulos decorativos (de colores)
There were a few others listed in the original post, but I was not able to confirm these by any other sources.

Rociar transitive verb 1. to sprinkle (arrojar gotas); to spray (con espray) 2. (arrojar cosas) rociar algo/alguien (de) -> to shower something/somebody (with)
PS - how would one say "to sprinkle sprinkles"
