Which is the correct way to say "fasting" in Spanish?

The verb is ayunar and you can find the conjugations here:

"Estoy en ayunas" "I am fasting" although

"Ayuno" I fast

What's the difference? As I understand it, the first is a current state of fasting while the second implies that, even if I'm not fasting right now, nonetheless it's something I do when it's appropriate.

"Abstencia", while also used for fasting can be more specific, relating only to red meat, booze or whatever you think you should do without.

...and by the way, "fasting" as a technical term for pinning the bars of a capstan to the drum is something I haven't yet found an equivalent for.
