In the sentence "Mi pizza est rica, pero los enchiladas no lo estan." What part of speech is "lo", and why is it singular and masculine , since we are talking about plural enchiladas.

'lo' - neuter pronoun referring to "the quality of being tasty"

Already answered (quite nicely).

The lo is referring to a concept (saber rico), which we do not know the gender of, so the neutral pronoun is used.

My pizza is delicious, but the enchiladas aren't like that/that way/ similar, etc.

In other words, the lo is not referring to any specific noun in the sentence, so the neuter form is used as the gender of an unknown noun (antecedent) is not known.

If the sentence was:

Mi pizza está rica pero las enchilladas no son ricas.

We wouldn't have the abstract concept.

Notice that the lo cannot be referring to rica as pronouns substitute for nouns; not adjectives.
