Estoy and Soy are the 1st person present forms of the infinitive verbs Estar and Ser.
The short answer to your question is that Estoy means "I am" when talking about where one is located, one's state of being, or to conjugate the present progressive tense. Soy also means "I am" but in the sense of things that you are "equal to".
