To "accept" an answer
Hello Todo el mundo, What does it mean to accept an answer? Does this mean that I am choosing it as the best answer? ¡Gracias!

I believe that it is a mechanism to show that you feel that the reply has sufficiently answered your original question. It is both a signal that no further responses need be provided or that it answered your question in a manner that was particularly meaningful to you.
There are cases where it may not be the best answer (you may have only wanted a simple explanation) and others providing more elaborate explanations are only providing details that you are not interested in.
It is a subjective evaluation. It is the answer that you most appreciated.
Take note, however, that occasionally inaccurate answers are accepted by authors of questions due to their ignorance of the topic. Someone will usually try to contact you to make sure that you are aware that you may have accepted an inaccurate answer. My suggestion is to never accept an answer that hasn't been voted up or commented on by, at least, one other member.
