I wish we had a little more context on this, becuase there could be several answers.

If you're talking about 500 feet being a high place to jump from, then you would probably say "es muy alto"

If you're talking about $500 for a pair of shoes, you would probably say "es muy caro"

If you're talking about a guess on The Price is Right, you might say "es demasiado"

You could say ""¡500 es muy alto!", but to me it would feel a lot more natural to say: "¡500 es demasiado!" (500 is too much!)
