?Es correcto decir desellamiento? Como por ejemplo: El desellamiento del documento es un acto legal.

It seems to be a term used with marriage contracts annulments.

The Bible talks about removing the seals from scrolls (especially Revelations and the Book with the seven seals), but they tend to use the term "abrir los sellos", rather than "desellamiento".

I don't know either but let's try a quick guess.

"desellamiento" would appear to mean literally taking the seals off and, for a legal document, this just could mean depriving it of its status as a sworn/official/legal document.
