When I say "It is delicious!" Do I say "¡Que rica!" because I am female???

No, it doesn't change with your gender, rather, the adjective goes along with the noun.

¡Que rica!" is for feminine nouns, e.g., la comida.

¡Que rico!" is for masculine nouns, e.g., el café.

This does not depend you who is talking but which food we are talking about.

You are talking about soup: la sopa (feminine) ¡Qué rica!

You are talking about ham : el jamón (masc) ¡Qué rico!
