scrambled eggs. I noticed that you have completed the Learning English series so I assume the you are asking how it is translated into English.

You should complete the native language item on your profile page.

I must say I wondered if it was the translation or pronounciation that was asked for! - caza, May 7, 2010

I say something like:

Oo-wey-bos Rey-voo-el-tos

If you look up each word in the dictionary there is a little speaker symbol that you can click and hear the pronunciation.

Marianne: a question, not a correction... is the 'bos' maybe regional? I have only ever heard 'vos' in my area. - LateToDinner, May 7, 2010
Hi, Late. When pronouncing the "V" in Spanish it should sound very much like a "B." They are virtually identical in Spanish. - --Mariana--, May 7, 2010
Same here in Andalucia - the V becomes a soft B - caza, May 7, 2010

Now I understand why some answers don't track well. The original question did not ask for English, did it.

So now I would propose that rancheros is scrambled eggs and revueltos would be "over easy".

Sorry, backwards. Revueltos is scrambled and racheros is over easy. Since I only do them sunny side up, I got ahead of myself.

On V and B... V is a dental-labial sound, meaning that your teeth touch your bottom lip before sounding. B is a bi-labial sound, meaning that both your lips touch.

However, if people notice Spanish speakers, most Spanish speakers don't distinguish between dental-labial and bi-labial sounds, thus V sounds like B.

H is silent. E is slant towards A, so you get WEIBOS for "Huevos" A is like AH so you don't pronounce RANCH like English, but rather RAUNCH.

Simply put, WEIbos raunchEIros...
