I wasn't sure if I was to use perder. And which noun to use for mind, mente o cabeza? But, I know that perder la cabeza means to fall in love so I wouldn't want to say that to my teacher! Is there an idiomatic expression maybe?

"Cabeza" means "head". "Mente" means "mind". I would say "perder la mente".

You could say "volverse loco/a." Me vuelvo loca con todos estos quehaceres.

Perder la mente...I have never heard that before.

I would say:
