Why is that me in there? It should "I don't believe that!" What is the difference between "Eso no "me" lo creo" and "Eso no lo creo"? Gracias.

It may just be a matter of emphasis or a shifting of the meaning to the person involved.
It would be similar to the two English sentences:
I don't believe it.
I don't believe it myself. (or I, myself, don't believe it). It emphasizes who rather than what.

I find that the use of "me" as in the quote provided, is more of a Spanish custom than anything else. We don't use it very much in Latin America.
