Disfrutar haciendo?
If I would like to say that I enjoy doing something, do I use the gerund of the verb? Por ejemplo, "disfruto haciendo algo".

As I understand it, the gerund in Spanish cannot be used as a noun like the gerund in English. "I like swimming" is fine in English but you cannot say "Me gusta nadando". I believe the correct form is to say "Me gustar nadar" which actually translates as "I like to swim" but it gets the idea across. Specifically in your case, I would use "Disfruto hacer pasteles" (I enjoy making cakes.) Use the infinitive of the verb you want after the word "Disfruto".Spanish is loaded with verbs!
Sneaky Tennismom but a very practical way out. I think that if you really must use disfrutar followed by a verb you should use the construction:
"disfrutar de hacer cualquier cosa"
but I confess I'm not totally convinced. Outside travel ads you don't often see disfrutar.
Me gusta/me encanta + infinitive.
Me gusta comer chocolate.
