Ama de llaves
I have read the expressions 'ama de llaves' and 'ama de casa' today, and both times they were referring to a woman, but using 'el'... is this correct? Do they both always take the masculine form? Is there a reason for this?

It is for the same reason that you say "el agua" or "el águila".
"La ama" sounds awkward.
