What kind of food is bacalao al pil-pil? I know bacalao is cod, but I could not find any definition for pil-pil. Thanks!

I found a recipe for it - "de-salted cod cooked in extra virgin olive oil, garlic and chili"

see here: http://www.plateruena.com/

al pil-pil

Definition: a sauce, originating in the Basque country. A sauce made from oil in which the fish has been cooked, garlic and guindillas - very small, hot peppers. When prepared in this way, the dish is usually served in individual clay dishes.

Great! Thanks for the reference. Found out too that "pil-pil" is Basque for bubbling. - Rikko, Mar 28, 2010
