Hi. I was horrified to see under fish menu in usa...dolphin on the menu ! Dorado or dorada is a verb meaning gold or goldern. It can be the fish is goldern like mediterrian sea bream or dolphin fish..mahi mahi. The bream often has a gold lateral line on its body. The mahi mahi is goldern but can change its colors to match the surroundings ! dorado can also mean the way the fish is cooked i e a goldern color after cooking. Its the male dolphin fish fhat has a snubnosed that makes it simolat to a real dolphin. Whether its spanish sra bream or atlantic/pacfic mahi mahi ....its gorgeoys. Enjoy. !!!

It is a fish, although I know it as a different one from the one shown by Benz in the picture. (It is entirely possible that different places may have the same name for different fishes). To me, "Dorado" is mahi-mahi, also known as "dolphin" in some places (not to be confused with the sea mammal!)

Even though in this case, the original posters question refers to a specific and common menu item which is a fish, dorado(a) can be used as an adjective describing a golden brown color. The term is used all the time on cooking shows. I have been transcripting cooking shows and I hear this term a lot.

Restaurante La Dorada, Madrid. Some of Spain's best fish restaurants are in Madrid and La Dorada is one of them. We highly recommend this large restaurant, ideal for big groups - they even have reserved sections called "cabins" for groups wanting a little more privacy. Very popular with local madrileños, business people during the week and families at weekends. We especially recommend the Fritura Malagueña (fried fish Malaga-style), Ensalada de Bogavante (lobster salad) and Dorada a la Sal or Lubina a la Sal, (bream or seabass baked in salt) and any of the shellfish. Waiters will be happy to advise you. The house white wines are good value and served nice and chilled. Deserts are delicious and little biscuits and chocolates are served with coffee. The restaurant is child-friendly, especially at weekends. It also has the advantage of opening at eight in the evening for clients who prefer to dine relatively early by Spanish standards. In my experience, Dorado is another name for Mahi Mahi, also sometimes called Dolphin fish (obviously, not the mammal!)... and it is delicious!

Here on the Gulf Coast of the States, and in the Caribbean and Latin American countries I've been to (Mexico, Belize, Costa Rica, and Honduras), Dorado is Mahi-mahi/dolphin (fish, not mammal). It is VERY tasty, too.
