Very interesting question, flat, welcome to the forumgrin

destazar is a very seldom used word, may be among fishermen, I had to look it up.

destazar.

  1. tr. Hacer piezas (? pedazos).

It means to put into pieces. I guess agujas are these in this context:

I remembered that the fish Santiago catches is a giant Marlin, so "agujas" makes sense. The rest of the sentence reads:

"...sobre dos planchas, con dos hombres tambalandose al final de cada plancha hacia la pecaderia donde esperaban a que los camiones llenos de hielo los recogieron para llevarlos al mercado de la Habana"

So they cut off their bills and carried them extended over two planks (?) with two men staggering at the end of each plank to the fish house where wagons full of ice collected them to take to Havana.

Plank is very good here, yes, it could have meant grill, but the context says it all!

That's a tough one. Looks like "Cut up their (some sort of fish) into little pieces and loaded them extended above two plates" but I could be wrong. Are you using "The Old Man and the Sea" to learn Spanish? That seems like a bit of a tough one there.
