- El pollo estaba seco/reseco.
- El pollo no tenía el suficiente jugo.
- El pollo estaba demasiado cocido.

El pollo era seco.
The chicken was dry. 
I'm pretty sure that's right, but my Spanish isn't that great. However, I would really reccomend you use either the "translate" or dictionary" tab.
