Guadalajara has a great language school too. The school is Harvest Language Center. The website is www.harvestlanguagecenter.org.

There are dozens of Spanish immersion programs in Mexico. It really depends on where you want to go.
I just returned from a month in Oaxaca (southern Mexico) -- it was a great school and I highly recommend it.
